What a great night! As a few people were unsure what Paleo was all about I asked Wassim (Owner of Sprout Cafe) to cook for the first official Paleo Potluck Dubbo night. This allowed people could get into the swing of things in a comfortable and friendly environment.

People have been nagging me for days for the recipes so I personally went down and harassed Wassim to get them! Here they are.

MAIN COURSE

Meat Ball Skewer

1kg Lamb mince blended with 1 Heart and 1 Liver
2 heads of roast garlic
3 onions blended with bunch of mint, basil, thyme, parsley and marjoram
1 TBSP chilli flakes
1 TBSP cayenne pepper
2 TBSP sea salt
1 tsp pepper
Blend some of the salsa in with the meat balls

Put balls on skewer with a strip of bacon weaved between each ball.

Vegetable Skewer

Cut desired vegetables into 2cm cubes and put onto skewer. These are the ones Sprout used:

Sweet potato
Butternut pumpkin
Capsicum
Zucchini
Egg Plant
Mushrooms

Salsa

1 cup olive oil
1/4 cup lemon juice
1 head of roast garlic
1/2 bunch of shallots
Herbs: mint, basil, thyme, parsely and marjoram
Salt and pepper
Chilli flakes

Salad

Sliced julian apple
Celery
Fennel
Shallots
Walnuts
Rocket (use any greens eg. Cos Lettuce)

Salad Dressing – French Vinaigrette

1 cup of olive oil
1/4 cup of lemon juice
1/4 cup of apple cider vinegar
Salt and pepper to your liking
TBSP honey
